There are several greens that grow just fine in the winter - snow and all - but they will grow slowly. Thus its hard to get an ample crop of greens in the winter. Kale, cabbage, parsley, and and to a lesser extent Chard do well through the winter even below freezing occasionally.
With what she is doing you might get one meal's worth. Plant the normal way, and maybe protect if it gets extremely cold, and you can have greens from dozens of plants.
