The iodised salt container I have here has potassium iodate in it. I don't think that's going to disappear. https://en.wikipedia.org/wiki/Potassium_iodate

Wikipedia says this about using potassium iodate rather than potassium iodide:

Because iodide can be oxidized to iodine by molecular oxygen under wet conditions,

The iodine produced under these conditions might evaporate I suppose.
