Wouldnt Russia check what this person has in the pants at the first opportunity?

Russia is not the type to play along with identifying games.

So why would Russia seem to agree this athlete is female?

All someone has to do is ask the head coach of the LSU female basketball team, Kim Mulkey. She was Griner's head coach at Baylor. I'm sure Ms. Mulkey was in the locker room while the ladies were changing prior to and after a game. She certainly got a peek or two at what was or wasn't dangling in Griners panties.
