There is no regular option to disable the proximity sensor on Android, and im assuming on iPhone. If you hold your phone to your ear while making a phone call and your screen goes black and touch is disabled, your IR LED and sensor is still being used.
You can however, disable your sensors in developer mode. It will give you a quick access menu option to disable/enable quickly. Disabling sensors will include your microphone, location, camera, IR, and ambient light sensors. This is really useful if you are tired of your phone listening to you all the time and worried someone might be accessing your camera.
Enable developer mode - Go to: Settings>About Phone>Software Information> Tap: "Build Number" 5 times to enable developer mode.
Go back to settings, scroll to bottom. Go to: Developer Option>Quick settings developer tiles> Enable "Sensors off" setting.
Now swipe down from the top of you phone, you'll have a "Sensors Off" button at the top left underneath your date/time.. You may have to swipe down a second time to see the full list of phone option tiles.
Just remember to disable option if you receive a phone call or need your location lol.
