In Japan the food is plastic so the customers can choose what they want the restaurant to make from the window displays.
In China, they are making fake food for consumption. For profit.
They want to make money, spending the least money they have to. It's all about the money.

I could see a clear vanilla gelatin with an orange concentrate yolk as an interesting raw egg looking dessert.
That said, this clearly isn't what I just described & I must have grown up around too many animals & over priced plastics. It just seems cheaper to feed chickens scraps than to go through the hastle of making plastic eggs.
Now if it is being developed an a weapon if war, that makes more sense to me 🤷

The thing with having chickens is you have to purchase them, house them, feed them, need space, clean their space, protect them, may need a vet, use hen house etc. It's more profitable to just make the eggs from stuff.
