I asked higher ups in the local government to give me proof that Covid-19 was real. They said I would have to sue them for it. This was the summer of 2021.

The proof should have been readily available by then. If it was real.

What kind of a reply is that? I asked my school district to prove masks are needed and also helpful and they sent me a cease and desist letter. I told them they should have the data ready and available.

So much for honest, transparent government employees, huh?

They tried to cover up the fact that they had no fucking clue what they were talking about by putting the burden of proof on you, when they were the ones making absurd claims.
