Because the relative speed between the stars and you is not enough to make it difficult to view the stars.
Speed of a goose flying across the sky, pretty fast, relatively faster than stars in relation to viewing angle. Those are easy to see, stars would be even easier.
A bullet shot 25 feet in front of you, perpendicular to your line of sight, you'd probably not even see the blur of it passing by. That is fast relative to your point of view.
If you shot the gun and were shooting something large like a .45 bullet at slow FPS say 700, you can actually watch the round go down range with good light because it is not moving fast relative to your point of view, its staying in front and not deviating from your point of view other than to drop to the ground or to hit a target.
Relatively slow motion across your viewing angle is why you can see stars.

You are giving the textbook explanation. It simply does not satisfy the ridiculous claims of the spinning globe. These concepts are sound and observable. But they do not scale out to the insane requirements of the globe theory. Plus the water INSISTS that the earth is a flat creation. Earth is not even a "planet".
