What about getting a name for yourself and a body of work by doing podcasts or reading out other people's work or re-dubbing some anime characters? Then you can show people your work and in the meantime you are doing what you love and gaining sound engineering experience? You will have self-started and that shows real gumption to an employer.
Are there any amateur anime creators out there you could contact and work with.
I am reminded of the two person band "The Postal Service" who made electronica music whilst living far apart. Listen to them they are great.
