I use a ten-year old version of Outlook, everything is local. My last job before retiring was as a security engineer at a hosting services company; I don’t trust the cloud either for hosting or storage.
You should use a desktop for email and store the emails on your own hard drive. That's what I've done since 1989, and haven't lost a single one yet. Backups on your own hardware is the way to go.
