Come on, he didn't say Boeing 747s he just said plane loads. it's not like they have to fly it out the cheapest possible way! Maybe they used smaller planes that could maneuver out of trouble should it come it's way. Don't forget it's GOLD. It's not like it's Amazon Christmas gifts. Gold has incredible resale value & you can bet a million eyes were on each plane. They had to get it out safely without any black hat trying to take down any of those planes. 600 loads makes sense & yes, that would be about a tenth of a full Boeing load per plane or so
It doesn't matter if it's a 747 with 300k pounds or a much smaller plane like a 737 with 65k pounds, I don't believe for a second the Vatican had that much gold.
Also, cargo planes are not maneuverable, whether they have 300,000 pounds of cargo or just 65,000 pounds, Arranging security on the ground is also a pain as you need it on both ends of a trip, so the fewer trips, the less risk.
