My knife cuts thru gristle and fat. My fork picks things up also.

The beef at my grocery has local grown beef. All the butchers do.

I live in beef heaven right here in the USA.

Sorry you have to eat chemical tenderizing crap.

We don’t. We still have part of a cow that grew up next door from two winters ago in the freezer...and she has gristle and fat in some spots.
