I've never heard his name spoken by a Chinese speaker or English speaker, but for Mandarin Chinese "shou" should be pronounced somewhere between the English "so" and "show". And Chew can also be romanized/written as Zhou and pronounced nowhere new the English "chew". Despite speaking Mandarin Chinese, I have no idea how things are romanized for Chinese characters, in contrast to Japanese where the romanization is much more clearcut. I'd butcher Chinese names I see romanized just as badly as most others.
