Personally, I am convinced that anything you do online can be seen if you have people/machines looking hard enough

It can, and Linux will do even less to protect you from that than Windows.

However, there is an implicit consent to it happening with how ToSes are structured, so the best thing to do is revoking your consent by going away from Windows.
