The one thing I have once looked at is the age of Snow White, after reading about that claim that the character is officially 14 while the prince is supposedly a grown man. There doesn't seem to be anything solid. The dancer they used as a model when drawing her was 14, and the dancer used to model the prince was a couple of years older, as far as I recall they had danced as a pair before in competitions. And there is a rumor that one of the artists had said that she was 14, but it seems to be pretty unclear whether he meant the age of the model, possibly that the princess looked about that age because the model was, or if it meant that he thought of the princess as a 14 year old. What there does not seem to be any record of is that the princess was meant to be 14, and there certainly is no mention of her age in the movie. So it pretty much seems that the age of the princess is what anybody wants it to be.
Same with all the other princesses. No mentions of their actual ages is in the movies. One thing is of course the fact that the young girls watching those movies will perhaps prefer characters who are closer to their own ages, and since a lot of the fans are very young it would certainly be commercially beneficial if the ages are vague enough that they can be imagined to be very young. And when young girls daydream of boys, they often either think of a boy somewhat older than they are, or imagine one older than they are, somebody who would be a bit more mature and closer to being a man. That is when they aren't daydreaming about grown men. Because girls just do. Which of course makes at least some more vulnerable to pedos, but the fact still is that the preference for somebody at least a bit older than they are seems to be a fully natural thing for all teenagers, of both sexes, at that age one is in a hurry to grow up and be seen as an adult, so you daydream of somebody already an adult or closer to adulthood seeing you as a suitable partner because it makes you feel more adult.
