The egg yolk is the most healthy part of the egg. How ironic that cardiologists have been very anti yolk, pro egg white for decades. That is our health care system for you.

The yolk feeds the baby chick if the egg is fertilized.

The egg white is there to absorb the wastes from the growing chick.
