The odds are Merchan will sentence DJT to jail. What happens if he goes to Rikers and the Dems remove his security? Can they remove the Secret Service detail assigned to protect him? You know they will try anything and everything.

Would be tough. The Secret Service detail is mandated by an actual law authorized by Congress. Unless a federal court (and eventually SCOTUS) rules that law invalid for some reason, or unless Congress acts to change the provisions of the law, a judge does not have the authority simply to remove the SS detail.
How long do you think it would take the Dems in congress to write a bill removing SS protection from convicted felons? How many Rinos would gladly sign on?
It's already been proposed. Benny Thompson introduced the "Disgraced former protectees act" on on April 19 to strip secret service protection from any convicted felon. https://democrats-homeland.house.gov/news/legislation/ranking-member-thompson-introduces-legislation-to-ensure-no-secret-service-protection-for-convicted-felons-sentenced-to-prison
Yes under current law. When they pass a new law in the dead of night with the help of the RINOS, then what?
