I think that his hand on top is a domination move.

I've heard of it in this context before:

neutral handshake = both hands with a vertical axis.
domination 1 = twist the wrist until your hand is above.
domination 2 = if your opponent does domination 1, then add a hand on top.

Another thing one can do to dominate is put a hand on somebody's shoulder or back.
