Every time he touched his nose or his face it was because his hands were actually attempting to cover up a lie coming out of his mouth like a toddler does which is a natural inclination we have (given to us by God)
As we get older we no longer cover our mounds when we lie but we frequently still touch our nose or our face as we are lying.
Also crossing the arms is frequently a sign of either being a stubborn / close to new ideas or holding something back or protecting a secret by holding it close to your chest.
