I got downvoted for saying this here years ago. Everyone around Jesus wrote a book. Why wouldn't Jesus have his own work? There should be a gospel of Mary as well.
Most scholars agree Jesus was born between 4 - 6 BC. That’s a huge difference in time since the time of the Nivea meeting in 325 AD. There could be huge issue with what has been lost in translation or man’s potential for biased views during the meeting etc.
Jesus Christ is the Son of God, the second Person of the Holy Trinity. He had every opportunity to become a powerful political figure (see e.g. his triumphal entry into Jerusalem after raising Lazarus from the dead, celebrated as Palm Sunday) but didn’t. So why would he write a book when he had work to do directly? At least I have answered your question of why he wouldn’t.

In my University theology classes, they said that the Bible (New Testament) was written 300 years after the birth of Christ.
The council of nicea in 325 was to decide which books would be included. The books were already written. Just not compiled in to the modern Bible yet.
