McDonalds was the last major fast food corporation to switch to seed oils for frying their french fried potatoes. They used tallow before that.
And they are good for maybe 5 minutes after they leave the fryer. Then they're a floppy bleche...

Tallow has a higher smoke point so the cooking temps are higher and the fries can get crispy.
