He can still be brought before a special counsel and testify. The 5th wouldn't apply since he's been pardoned so he can say anything. Also, if he lies under oath, the perjury charge would stick since it's a new charge. If he admits to raping babies he can't be charged, but if he says he didn't and it's proven he did he just perjured himself. Checkmate.
