Back in the old days, before clocks and calendars, there were only the sun, moon and stars to mark the passage of time. (for the significance of the passage of time see this)
Farmers used the high, low and mid points of the sun and the phases of the moon to determine planting and harvesting times.
The modern Druids (and other interested folks like myself) mark these events as a nod to that history, though I also use them to check if the people I meet/talk to are wise in the ways of the heavenly bodies (almost no one is).
