I use them for small batch sauerkraut. The ones that I have are plastic with a relief valve in the middle. When the pressure builds to a certain point it will "pop off" too release the pressure and then reseal so as to not let unwanted bacteria or contaminates in. I'm not sure where that model is found as mine was a gift from the person that taught me about the technique.
