Jesus was disputing with the Pharisees in that chapter. They were the "bad guys" of the divine story, not all Jews. Too bad when context ruins your point.
I assumed people by now understood Jesus and the Apostles were ‘Jews’ also so didn’t need to put in a disclaimer all the time for brevity’s sake. It could also be said not all Pharisees are “bad guys” either. Nicodemus, Gamaliel and Paul (Saul) - just to name some. I get your point, though.
