I always laugh at this comment. Do you feel relieved when someone comes at you with a knife? "Whew, now I can easily disarm him and use it on him!" Same for guns, just easily dodge the bullets, take it and shoot back, lol.
If you know martial arts, it's quite easy to disarm someone who is holding a knife the way that young woman is. She is actually holding it backwards. You want to hold the knife so that the blade runs down along the length of your arm, with the sharp side facing outward. There is then no way for an attacker to grab your wrist without getting cut by the knife. Two knives positioned like this are ideal. From this position, you can still use both hands to punch, while also being able to slash and stab with each of the knives.
Also, if you have a weapon, you must be prepared to use it. This young woman exudes no confidence that she will actually attempt to use the knife. It's obvious that she doesn't know what to do with it.
A gun, on the other hand, is a completely different story. You are correct when you note that you can't dodge a bullet.
