I taught AP Environmental Science once upon a time. We spent a unit on resources and Water was a very important topic. As you say, it will be used as a power play, wars will be fought over water resources.
Never mind that 70% of the planet's surface is covered with water, the demons will somehow make it scarce.
It's pretty expensive on a large scale to desalinate sea water.
I watched some videos on it and was surprised how hard/expensive it was.
On the othes hand, go research the aquifer system of the world. There is plenty of fresh water to go around.
