You are correct. I think a lot of people nowadays use the term processed synonymously with Ultra-processed:
Unprocessed is raw ingredients with nothing done to them aside from cutting them, or discarding unedible parts. So like raw meat, fish, vegetables, fruit, nuts, berries.
Processed is anything cooked, canned, frozen, cured, smoked, dehydrated, added ingredients, flavorings, or colorings. Which this includes cheese.
Ultra-processed Stuff made from multiple ingredients and additives, like sugar, seed oils, gluten, maltodextrin, sugar alcohols, high fructose corn syrup. This would include something like cheez wiz.
Like bread is processed, but US bread is ultra processed, since the wheat in our flour is dried out with glyphosate, bleached, fortified, bromated, and the rest of the bread often has added seed oils, high fructose corn syrup and other preservatives. Ultra-processed foods are the worst for you, and is the root cause of a lot of chronic disease. I think that is what most people are actually referring to when using the term processed, but it's really just semantics.
