We just started ordering flour from Italy, we make a loaf or two of Sourdough bread weekly. No problems with digestion using this flour. Prior to buying the imported flour we were using King Arthur organic flour.
The brand we use is Polselli, Selezione BIO Tipo 00 Organic soft wheat flour 11 lb bag, we order it through Amazon and have it set to automatically be delivered every month. You can get it delivered as often as you like. It is a little more expensive than flour you purchase from US flour but well worth the health benefits. We also purchase our pasta the same way from Italy. Sad that the US system of bastardizing our food has come to this.
