We can measure the flatness of a lake using a long flat object, by extending it over the water surface, we should see a constant distance to this surface.
If however the earth is not flat, we expect the surface of the lake to be curved: i.e. we would expect to see an increase in the distance between our flat reference object and the lake surface.
Okay, so now we can do the following test:
We go find a big lake and wait for a calm clear day.
I will set up a laser level at the lake shore.
We take a small boat and on it we mount a broad measuring stick.
We aim the laser at the measuring stick.
You set off moving away from the laser in the direction it is pointing and every so often you measure the position of the laser dot on the measuring stick.
If the earth is flat, you would expect the dot to not change position. Linear deviations from the original position simply indicate your laser is not level.
However, if the earth is not flat, you would expect the point to rise (in a non-linear fashion).
People have done this experiment and surprise, surprise, the lake surface was not flat. It was curved.
Another point:
Gravity is a force that "originates" from the center of mass of each object. In other words, you can replace every object with a single mass at the center of origin to get the exact same influence on every other mass.
Now, imagine the world has a disc shape. Where would the center of mass be? It would be in the geometrical center of the disc.
Okay, so now you move from the center of the disc (on the surface), outward. In what direction would gravity point as you move to the edge of the disc?
It would point to the center of mass at all times. Ergo: In moving to the edge of the disc in every direction you would feel like moving uphill. In fact, when you reach the edge of the disc, you would be more or less parallel with the surface, just to maintain your balance.
Now go around the world and measure the direction of gravity. You will find it points "down" and never sideways. Ergo: The planet is not a disc, but an oblate sphere.
Flat-earthers are really not well versed in science. It is tragic, because it makes all of us look bad.
