Couldn’t we just sue them based on the fact that they aren’t doctors and can’t give out medical advice or decrees? I feel like that’s a pretty simple case to make. Even a doctor can’t make you have a medical procedure or anything like that, so who the fuck do these corporate assholes think they are?

Either they don't know the law or they don't care about the law. They can't make you do any of that. And honestly, they can't ask for proof. So if someone doesn't want to make waves (which I think they should and everybody should start suing every one of these you know whats,) and they ask for proof you've had the vaccine, remind them that inquiring about your protected health information is against federal law.

Yes, but do you want to die on this hill. Masks are medical devices, so these places are indeed practicing medicine without a license. A less costly way of fighting this is to report them to the very health department that is issuing these mandates.
In the past I've stood my ground, and they threaten to call the police. The police have no legal ground for doing anything to you, but will maybe make a reach to cite you for trespassing. You can successfully fight that, but do you want to? I haven't yet. However, being forced to show papers is the hill we must die on!
I read folks here saying that a private business can enforce any policy they want. This is not true. Can a store make a policy that you have to have black skin? No. Why? Because there are laws against this. A store policy cannot violate the law. The Civil Rights Act gives me religious freedom, and my religion does not permit me to hide my face in fear or shame. Anti-discrimination laws protect me from being treated differently due to a physical condition (e.g., requiring oxygen, being psychologically adverse to covering my face, having white skin, etc.).
