I have been using a custom Android ROM that started out as Cyanogen Mod and then changed their name to LineageOS for about 6-7 years. There are many privacy features. If you want Google Apps, you have to intentionally download them and install them.

Where did you get your phone?
I bought a Samsung S2 new near 2010, then after 4-5 years, I put the custom ROM over the Samsung software, which basically removes all traces of it being from Samsung other than the first startup screen. Later on i bought an S5 from a friend, reflashed, and liked it so much I found another used S5 and prepared it for my mother. My father is still using my S2 with Android 10 on it. https://wiki.lineageos.org/devices/ will show you what phones are officially supported. There are other ROMS out there too, but you may have to visit https://www.xda-developers.com/ to read about them. It helps to be somewhat of a nerd and willing to experiment.
I'm just a much different type of nerd - more about spelling and grammar than tech, unfortunately. I'm really clueless with this type of thing. I appreciate the info!! Maybe I'll ask some of my more tech-nerdy friends to see if I can get a hand with this.
