Think about any animal-on-the-loose story you've ever read before. The police/animal control will usually go out of their way to preserve an animal. One would think that would be doubly true for something as rare as a white deer.

I spent a couple weeks in Edinburgh. They keep the legend alive there with the tourists. That's how I knew of it. I didn't think about it until you posted about the Latin motto of Bootle. it got me to thinking when you mentioned it might be an auger. It could mean that if you kill the stag, the opportunity to see and know Christ is also dead. Or, that your quest for spiritual knowledge will fail.
Might be a comm from the DS, as they're trying to prevent us from gaining this knowledge.
