am an engineer, these people act exactly like engineers/scientists i work with daily, albeit these being more relaxed because they're in a restaurant setting. i believe the issue is most non-scientists have been conditioned to believe scientists are verbose, all-knowing beings with nothing but lab coats in their wardrobe. in reality we're just normal people highly specialized in a single field through a lot of studying, achievable goal by a good amount of people.

I mean saying probably and maybe like they don't know anything. I just thought someone who is a specialist would talk with a little more certainty even in casual conversation.

Yes. But I would expect better speaking skills. The way they eat didn't surprise me - no social skills. But they speak like children.
