Firstly, I am not an expert but my understanding is that it can never be 100% conclusive. It is all down to probabilities. Viruses will mutate but that takes time. The fact that they can't find an animal with anything close to having this insert in it is quite damning in my (non-expert) view.
So to think that the SARS-CoV-2 virus just made this jump in an instant is really stretching credulity. Maybe the intervening steps will turn up at some point. Who knows?

I think that starts at the Pirbright Institute..... which is where the cellulose being introduced was first experimented with....

No, they will not because they cannot.
Just watch some of Tom Cowan's interviews. He explains how they create the sequences in computer program ("in silico").
