Some will, some won't. NATO will typically. But this looks like a shot of commercial flights, though I can't be certain.

Click U in the top right corner for military craft only. They are not all always visible but they be busy there today! Could be training.
Never saw such an apparent lack of military planes over 90% of the world.
I wouldn't anticipate all of them being visible. I get fly overs all the time that do not show on radar.
