It's pretty much standard client-server behaviour.
Your email client lives on your laptop, The mail service provider collects and delivers your mail from it's servers.
When you check your mail, your device goes to the server and collects (downloads) your mail to your device.If you delete it, it just takes it out of your Inbox folder and puts it into a trash folder.
And unless something is erased and written over on a laptop (and even then it may take more than one read/write cycle to make it un-retrievable), it can be retrieved by someone.
