Mutation influencing the evolutionary process are easily see in micro-organisms as they have such a prolific turnover rate. Animal husbandry has also produced a wide range of variations in domestic animals.
So you are defining mutations and cross breeding as "evolution?" My experience shows that this produces a weaker animal, not a better one. The fact that humans have to go in and alter the dna actually disproves evolution.

Mutations, adaptions and or variations drive the evolutionary process. Cross breeding "human manipulation" readily shows us the various ways that it may express itself. Superior/Inferior who knows, what may be beneficial today may become detrimental tomorrow, many animals have evolved there way to extinction.
I'm not certain I disagree with you friend, I understand the limiting factor of mutations, once that gene's trashed, there's no going back.
The question was, "Evolution occurs, it's happening around us now" sauce?
I was referencing the evolutionary mutations of micro organisms, bacteria in particular as they evolve at such a rapid rate beyond the reach of standard drug into MDR and XDR status, a rather well-known phenomena, hence the evolution of life, you are correct that would be a environment/chemical stress (epigenetics) driving that evolutionary force.

I referenced animal husbandry ie "cross breeding" because it's a readily available visual reference for acknowledging and understanding genetic fluidity in motion, again you are correct (speciation).
my next accertion in a very oversimplified way was that mutation and or adaptation and or variations (some variables but certainly not all) drives that "evolutionary process, that occurs everyday all around us".
and I'll add this,
I personally believe it's one of Gods greatest masterpieces, but I may be wrong, his Glory is infinite.
Ps. I think the "throwback" DNA ie. retro genes are fascinating, every so often whispers from our ancestors are heard in our offspring.
