Yep, lots of water this year. I'm behind on everything outdoors. It's been really hard to keep up with the weeds, outdoor plants, and the grass.
I'm not planting a lot this year, variety-wise, as we have a lot already canned from prior years. I have a food intolerance to sulfites, so I'm sort of stuck having to can a lot of my own food. You wouldn't believe how many things have sulfites in them -- and producers are not legally required to note this on their products. A lot of vegetables naturally contain sulfites, too -- like anything in the brassica family (cabbage, broccoli, cauliflower, etc.), and allium family (onions, garlic, chives, etc.) Caramel coloring contains sulfites, too. Most frozen vegetables use sulfites to preserve the color. It's in everything. It sucks, but what are you gonna do? One has to eat.
I have a lot of food intolerances too. I've thought that jusssst maybe, all of these food processing facilities being destroyed are a way to get the crap out of our food. Good for you for canning. The FDA is not our friend.
Well, it's either can or starve. You can't even buy a can of plain tomato sauce without there being onions or garlic in it.
I went to a friend's place once for dinner and had (cooked, lol) frozen peas. I got sick as a dog after eating the meal and couldn't figure out why, as everything was Wulf-approved. I went home and started searching online and discovered they put sulfites in frozen veggies. Who knew? Canned or frozen corn is a problem for the same reason. Corn turns a brownish color without preservatives. They do it for potatoes too, like the potato flakes for making mashed potatoes or frozen french fries. High fructose corn syrup has it, as well, and it's in everything! If someone wants to burn down the high-fructose corn syrup factory, then I'll be right there with the matches, lol! Was the worst decision anyone ever made. Fun fact - high-fructose corn syrup was a by-product and once considered useless. They used to feed it to pigs just to get rid of it until some DS "genius" decided they could make money off of it by adding it to foods.
