Animal fat is good for brain health. Stay away from seed oils such as Canola, Soy, Corn, Safflower, Sunflower etc etc. Use Ghee to cook or Olive oil and no other.
Grass fed beef and fresh organic vegetables only. Nothing processed at all.
No sugars especially.
I would add virgin coconut oil to your oils. And take a look at intermittent fasting which really gives your body a rest and time to reset and recover.
Take out the olive oil, too. Use PURE coconut oil instead. If it has a stronger scent, it isn’t pure. It should set at 72 degrees F. Believe it or not, Olive Oil is almost as bad as other seed oils. I know, I was surprised, too, when I learned about it.

Peanut butter, and tomatoes are also inflammatory I still eat tomatoes but only with tacos. I use a few taco chips and make a salad. Some things you just can't compromise on lol but I still try to keep it under 20 carbs a day, that's strict keto for me though.

This is probably the best advice. Cut carbs to zero if possible. Eliminate: Cereals, Alcohol, Fruit Juices, Sodas. You're gonna get a few grams of carbs no matter what you do, no big deal, just avoid them. Also, 20-30 minutes of exercise daily. With bad knees, consider swimming or maybe kayaking. Is there a city aquatic center nearby?

Commercial peanut butter usually has soybean oil. You need natural or organic for it to be healthy.
