Been on KetoDiet since July 2013.
At first you count your calories and restrict it all and it’s boring, then you switch to LazyKeto / Alternate Dieting (18:6) and it’s better.
Lazy Keto means you don’t weight anything to ensure you remain below 25g carbs a day, you read the labels to ensure the food is not heavy in carbs and avoid taking much.
Then, there’s the next step: you become a creative cook and consider what food you miss… then recreate the recipes. I did muffins, lemon custard pie with meringue top, pizza… my Muminlaw even offered me a mini fryer to experiment… Turnip, butternut or avocado fries even positively surprised my guests.
I’m just at the junction of lazy keto and getting creative, like you talked about. It’s a daily adventure. I can’t express how happy I am with the results of a ketogenic diet. It isn’t really about the weight loss to me, but more about the inflammation and joint pain. It’s dramatically better.
