Out of curiousity, what kimchi have you been eating? I love buying different varieties and brands (honestly not super keen on my current one, which is sad since i was really excited to try it) and i need some inspo to power through this jar to get to the next
Oh my, What a treat! I've tried the inhouse kimchi at an hmart nearby, and it was decent. Not too many places ive found locally are actually making it here, very cool!

On the plus side, you got a ton of new probiotics in your belly from eating so much kimchi! Did you eat rice too? It might have been the rice that ended the experiment so quickly, if so. Haha... thanks for sharing your experiment! Can't wait to hear your next food adventure.
It could have been the rice; maybe it was too much carbs for the meal. I think that perhaps if you repeat the experiment with just the meat and kimchi, you could go into ketosis, and be able to live on this diet indefinitely without feeling sick. You'd have to really burn up the extra glycogen stores in your liver in the first few days to prevent yourself from getting the "keto flu" but after that, you'd be golden. Lol. I think you need to try a keto version of your experiment.
