Anybody have any ideas on why this is happening other than supply chain issues? Is there a nefarious issue here? Distilled water is used heavily in the medical world for MANY things. Could this be another way to kill off vulnerable people who need distilled water for health reasons?

Medical facilities make there own distilled water. The Lab in our facility makes its own distilled water as well. The supermarket I shop at has never had a shortage of distilled water.
When you defrost your freezer the melted water is distilled.
I have a no vent dryer and the water that comes from the clothes is darn near distilled 3ppm dissolved solids.
Definitely noticed the last few months here in FL. FIL will only drink distilled and he keeps coming up empty.

How would you capture it? Is their a hack? Common household item? Type of hood or funnel?
You are about to learn how to make booze fren. Start searching for videos. I would just use glass jars depending on how much I needed would depend on how big my jars would be.

Water distillers are worth having; they range from $125 or so and up. Top-notch, American-made units are available from Pure Water Inc for -- yikes!, I just saw the current price, "on sale" for $750, a definite increase. Thank you, Federal Reserve and Team Biden. We've been using them for years though and they're much more reliable than others we've had.

I have been ordering a case of distilled with my other 5gal water and the last two deliveries were cancelled. I was told itโs no longer available in FL. The grocery stores have it though.
no connection to this company/product, but i have found that the zerowater.com countertop set for tap water, or any other water, has zero ppm and does a great job...our well water is good, but was shocked at the ppm, ditto for tap water having allowances for toxic ppm's, and fridge filters are useless...had an older big dog that started having urinary issues, so put him on zero ppm, and no more urinary issues...amazon has the zerowater products and filters at decent prices, imo...with our well water, i can get about a week-10 days from a filter...fyi, not promoting, just sharing info fyi...
Our city went around and sealed any wells within the city. My friend had a well cap on his property, they came in on a weekend and filled it with concrete. No, really, I told him that was bullshit if he wanted to have a resource at his fingertips. He didn't care. He said he had city water. But said he liked being able to use it from time to time. He would wash his car. So it even worked.
