Makes me wonder, maybe Kale is actually bad for you since they promote it.
How the hell do we know what's true anymore.
Kale is very hard to digest. In the Netherlands we know that it cannot be consumed until a frost has settled on the crop - to break down the cellulose. In fact, my mother used to throw it in the freezer before cooking it and mixing it with potato - she would be horrified at people eating it raw!
But in general, all the cabbage family is pretty hard to digest.
Does that count for lettuce too?
lettuce was one of the only vegetables that I could still eat before I dived in, but everyone is diferent, and it was easy to give up after eating it nearly every day. I didn't miss it.
Asked because every time I go without salad, I get horribly constipated.
This once led to a broken bone. Dead serious.
Interesting. Thank you for sharing. Is it best to cook it then?
Personally I would just avoid it - it isn't that tasty. But if you are compelled to eat it, because of it growing in your garden and you are hungry, for example, harvest it after a frost, or put it in the freezer, and then cook it. Best mixed with potato, cooked in the same pot, and mashed.
Definitely don't eat it raw, you'll only cause digestive issues.
