Yes, hybridized=gmo...how do you hybridize if not by genetically altering the structure? If you do some research on the ancient grains you will see that bread was a staple everywhere...after they messed with the seeds many are allergic to these grains (celiac) and many have other problems eating the current grains. 8 years ago, I suddenly developed an allergy to wheat. Not celiac, a full-blown allergy, anaphylaxis and all. Never had any problem before. I just have to wonder if it was something different they were doing in the processing, or something new they were putting on the grains. My mother has suggested I try flour from Italy, but I'm not really keen on feeling like I'm dying again.
I would say this sounds horrible...how sad for you...the anaphylaxis does sound like something foreign that you reacted to...I have never heard of celiacs suffering anything like that. I had an anayphylactic reaction to fire ants...not fun...BTW...keep some homeopathic apis or histaminum on hand...probably 30X or even 200X...learn how to use it...it may come in handy sometime...
Have you ever heard of Muscle Response Testing? That is a way to test whether a substance makes your body strong or weak? I am sure the directions for utilizing this are online and this would be a way for you to test sensitivity to different products. It really works...you just have to learn how to use it...just some suggestions of things that might benefit you going forward...take it or leave it...but good luck with trying to figure out if you can ever eat wheat again...God bless...
My daughter is celiac...it is a European ancestry disorder and in Italy they actually test for it at birth. While I think glyphosate can adversely affect it, if you read "Wheat Belly", you will see the argument for the genetic engineering of wheat over many years being a major cause. The issue isn't bleeding in the gut...the issue is that the villa in the small intestine lie flat, due to the allergic reaction to gluten in Barley, Rye, Oats and Wheat. This in turn causes a malabsorption syndrome which is extremely hard to overcome, although digestive enzymes do help. Many celiacs are able to eat the ancient grains such as Einkorn, because they have not been genetically modified. Truly the only way to treat celiac successfully is to not eat any of the grains mentioned.

I think celiac is caused by glyphosate (Roundup) treated wheat.
I believe those who take NSAIDs (ibuprofen and such) frequently are more susceptible as these pain relievers already cause bleeding in the gut.
My wife is celiac and I used to buy 00 flour directly from Italy to make homemade pizzas before we found out. She never had a reaction to it.
