Oh my God. Now the strays have to worry about being eaten instead of worrying about what to eat. I hope the people of Dublin are keeping their pets indoors. I'd hate to see my kitty cat roasting on that spit.
Not sure it's a dog. Could be a pig.
Most Pig Carcasses I’ve seen usually don’t have the dip at the end as it slopes down past the ribcage.
That however is a trait that is typical in many breeds of Dog.

Been watching dog rescue videos in SE Asia where they make big bucks catching strays, taking them to dog slaughter house. Some are bought by the rescue team to restore health and for adoption.
Several years ago my coworker told me near her home owners of the chynese restaurant she frequented got caught catching cats in the night to serve as chicken. It was reported on local news.
