Some restaurants also take a cut, I have had waitresses say.

I try to tip in cash too, more chances for the wait-staff to avoid taxes on it. I saw an interesting t-shirt at the gym last week, a young man (20-22 or so?) wearing a black shirt that said, "LEGALIZE TAX FRAUD".... I'm not sure what that is all about, but I thought it was interesting.
