Yeah, but he said Europe doesn't have these chemicals in the flour. He did say Italy, but he mentioned Europe as a whole...

Italy may have different laws

And European laws may have changed within the past couple years since he last studied those laws. Remember he was an environmental lawyer years ago. He probably doesn't keep up to the latest on everything.

Monsanto and all those other chemical companies probably made their way to Europe to expand their billion dollar empires.

Could also be yeast from specific regions that people are or aren't allergic to I guess.

Who knows; it's clear that issues have been arising in recent decades that didn't seem to affect people in centuries or millennia prior.
