Champagne is called "Champagne" because it's made in Champagne, France. If it's made somewhere else it's not really Champagne. In the same way, there can't be such a thing as French Bourbon because Bourbon is made in Bourbon county, Kentucky.

I use a homemade Soda Stream method.
I put a tire valve in the lid of a 2 liter PET bottle (soft drink bottle).
Fill it with VERY COLD (near freezing) crisp white box wine (the cheap stuff).
I have a CO2 tank with an air chuck ------ regulator set at 100psi.
fill and shake, fill and shake, fill and shake, fill and shake until it won't dissolve any more CO2.
Voila! ------ poor man's champagne.
