Well what I was told in relation to a discussion on CBC tv series titled Revenge of the Land was that the word is a short for Go Sip.
Back in days when news papers just started popping up the editor would hand a few pennies and ask an individual to hit the bar and listen to others conversations to gauge popular topics. (go sip a beer)
This was common practice also used by aspiring politicians to get a feel for what general population thought about them so they could fine tune their speeches. Suspicious lot even back then.
