Don't bother with 'brown' flour, because it is pig-food, put into food during war-time. Think hard-tack, Yuk.
Just get the high-gluten good quality white bread-flour, and in small batches. So maybe 5-10 pounds at a time. No point in storing sacks of flour, unless you plan to freeze flour in small batches. The bran and wheatgerm ten to go rancid.
Then, learn to bake.
Water, flour, salt, and a little sweetener to get the yeast going. That is all you need. All the other bits are decoration. (Cheese, poppy seeds, etc.)
Bake a bunch, and make it last a few days, because bread gets better when it sits for a day or two.
We just started ordering flour from Italy, we make a loaf or two of Sourdough bread weekly. No problems with digestion using this flour. Prior to buying the imported flour we were using King Arthur organic flour.
The brand we use is Polselli, Selezione BIO Tipo 00 Organic soft wheat flour 11 lb bag, we order it through Amazon and have it set to automatically be delivered every month. You can get it delivered as often as you like. It is a little more expensive than flour you purchase from US flour but well worth the health benefits. We also purchase our pasta the same way from Italy. Sad that the US system of bastardizing our food has come to this.
Thank you. I was ordering flour from Europe, one that was “old world” and not modified in any way. I was making the bread for the kids and need to go back to it.

So true. I had thrown out two slices of bread. The birds or predators wouldn’t eat it. It didn’t decompose it was there for over a week. I don’t consume breads and read labels and go with organic or non gmo foods. This bread was a family members favorite. They don’t eat it anymore.
USe organic flour. Source it properly.
